• 1/2 lb of fresh shrimp
• 1/2 link of smoked sausage
• 1 stalk of green onion
• 1 clove of green onion
• 1/2 cup of shredded mild cheddar
• Cajun seasoning
I cooked about a cup of grits in one pot, but kept it on low. While I sautéed the shrimp in another pot. I like my grits creamy, so I cook them twice as long on low heat.
I place about a tablespoon of butter in a small skillet with the garlic and green onion. I let that simmer on low until the onions were softened considerably.
I sprinkled a bit of Cajun seasoning onto the shrimp and mixed them with a quick hand massage before adding them to the pot of garlic and onion.
After adding the shrimp, add the smoked sausage. Be sure to slice the link up before adding to the pot. Once the shrimp has cooked and the sausage has browned on both sides, remove from the fire.
Add about a handful of mild cheddar to the grits. Stir until the cheese has melted and the grits turn slightly yellow.
Add shrimp, garlic, and onion mixture to grits. Cook on low about 3-5 minutes.
Serve and enjoy!
