I’d been having a mad hankering for all things crab related. If you follow me on Pinterest, you can easily decipher what’s on my mind at the moment. I’d pinned everything from crab topped soup (I’d been craving soup too, two birds one stone – BOOM!) to crab covered pretzels reminiscent of the ones my friend Stacey would bring me back from her trips to Maryland. Droolfest!
Then I came across this recipe for Garlic Bread topped with Crab Meat and Spinach (cue angelic harp music, light beams onto center stage from above). As we say in New Orleans, “Baby, when I tell you”! Yes, that’s all we say and that means we don’t have to tell you but whatever we were telling you about was/is amazeballs.
6oz. of lump crabmeat
2 tsp of Old Bay seasoning
2 garlic cloves
¼ cup of chopped green onions
1 cup of fresh chopped spinach
¼ cup of mayonnaise
1 ½ cup of shredded mozzarella
1 loaf of fresh baked or ready to bake french bread
garlic butter spread
I like to buy the ready to bake french bread from Kroger because I like my french bread on the soft side. If you have the ready to bake bread, follow the instructions on the package for baking then remove the loaf from the oven cut into 1/2 inch slices, butter each side of the bread with the garlic butter spread and place back in the oven for 3-5 minutes.
While the bread is in the oven, mix the first seven ingredients together. Take the bread out of the oven and top each slice with a spoonful of the mixture. Sprinkle shredded mozzarella on each slice. Place in the broiler (on low) for about 5-8 minutes.
